Food Safety Supervisor Duties

A Food Safety Supervisor (FSS) oversees food safety on site. The role adds SITXFSA006 to the food-handler unit and is legally nominated under Standard 3.2.2A.

The FSS guides staff, monitors controls and acts when something is unsafe.

What the FSS does

Supervises safe practices, ensures handlers are trained, monitors temperatures and records, leads corrective action, and is reasonably available during food operations. The certificate is valid for 5 years.

Responsibility and the law

Appointing an FSS does not remove the proprietor's overall legal responsibility. In NSW, FSS training must be done through an NSW Food Authority-approved RTO. Compare the roles in FSS vs food handler, or take the FSS practice test.
